I made these this morning to say thank you to my local butcher’s shop, who have been kind enough to take me on for a couple of days work experience this week. They let me make strings of sausages, showed me how to vac-pack, and took me into the walk in chiller with the carcasses for an anatomy lesson! By the end of day two, I had put ears, trotters and pigs heads in the display cabinets, sliced up livers and cuts, jointed chickens, made mince - and a lot of tea! Not bad for someone who used to be squeamish at the sight of carcasses going into butcher’s shops early in the morning!
It was really fantastic work experience, absolutely invaluable for anyone who wants to go into cheffing or is just interested in how meat gets onto your table. Thanks to Keith, Phil and the team for letting me come along - the last two days went so much more quickly than my usual days at work!

Steak sandwich with oven fries
I was having a craving for steak this weekend, but instead of just bbqing some New York striploins, the boyfriend and I decided to whip up some steak sandwiches.
We chose a sizeable piece of flank steak as our cut of beef, sliced it up and stir fried it with sliced yellow bell pepper, onion and sliced regular mushrooms. We also added two tablespoons of chopped fresh herbs (oregano and rosemary), a big splash of red wine, garlic powder and salt and freshly ground pepper. To assemble, we shared a demi-baguette sliced in half and slathered with a bit of garlic butter. After piling on the beef, onions and mushrooms, I added a few dollops of President’s Choice Maple Mustard and a big slice of provolone cheese. We threw the sandwiches in the oven to melt the cheese and warm the bun, and served them with a side of my oven fries. Craving satisfied!
